Vegetable Fritters

A quick and easy meal packed with vegetables.

Serves 4

2 cups grated carrot and finely chopped spinach
½ cup wholemeal flour
½-¾ cup white flour
2 tsp baking powder
1 Tbsp olive oil
2 eggs
½-1 cup milk
60g feta, chopped
1-2 tsp chopped fresh herbs
pinch paprika
green dressing
cherry tomatoes, halved, for garnish

Place vegetables into a large mixing bowl. Add flours and baking powder.
Mix oil and eggs together and add to the flour mixture. Mix thoroughly.
Add half the milk and mix. Add more milk if necessary until the mixture reaches pikelet batter consistency.
Gently stir in the feta, herbs and paprika.
Heat a non-stick frying pan. Spoon the batter in to create large fritters.
Cook on both sides until lightly brown. Be careful not to let the pan get too hot, as the mixture needs time to cook all the way through.
Serve with green dressing [see our recipe] and garnished with cherry tomatoes.

Makes 10-12 large fritters
