Pineapple, Mint and Ginger Refresher

Low in processed sugar and so refreshing at breakfast through to party-time.

Ingredients

  • 1 sweet ripe pineapple, peeled and cored
  • 250mls pineapple juice
  • 4 limes, juiced
  • 4 sprigs of washed mint leaves
  • 1/4 cup Buderim Ginger Refresher
  • 4 cups crushed ice

Method

  1. Chop pineapple roughly then crush in batches in a blender with the remaining ingredients, until smooth.
  2. Pour into a chilled jug and garnish with extra mint sprigs.

Makes approx 16 medium sized drinks.
