Waiting for reasonably priced greens to come back into the shops? Try this gloriously coloured salad made with readily available fruits and vegetables.
Full of flavour and a gloriously coloured dish
Serves 4
2 cups cooked, diced pumpkin
2 cups yellow tomato wedges
½ red onion, finely sliced
¼ cup basil or mint sprigs or flat-leafed parsley
2 Tbsp mandarin vinaigrette – Simply replace the lemon juice or vinegar in your favourite vinaigrette with the same amount of mandarin or orange juice.
Place pumpkin, tomatoes and onion in a serving dish.
Arrange basil on top.
Drizzle with vinaigrette and serve.
