Get the kids to eat their veggies with the sweetness of a tasty natural broth that the veggies have been simmered in.

Onions add a delicious sweetness to these vegetables simmered in a tasty broth’.

Serves 4

Poaching liquid:
½ tsp mustard seeds
1 tsp peppercorns
1 tsp coriander seeds
2 cups water
6 cloves garlic, peeled, sliced
1 small lemon, sliced

3 onions, red or white, peeled and quartered
4 medium carrots, peeled and sliced into chunks
2 medium courgettes, sliced
sprigs fresh thyme, for garnish

Combine poaching liquid ingredients in a large heavy-bottomed saucepan and bring to the boil.
Reduce heat and simmer for 5-6 minutes.
Add onions and simmer gently for 4 minutes, then add carrots. Simmer for a further 5 minutes, then add courgettes. Simmer for 2-3 minutes more, then remove all vegetables from the liquid and place in a deep dish.
Strain and cool the poaching liquid. Pour over the vegetables and leave for at least 4 hours, or refrigerate overnight.
Remove vegetables from liquid and place on a serving dish. Spoon over a little of the poaching liquid.
Serve at room temperature, garnished with thyme sprigs.
