Marinated Steamed Fish and Baked Vegetables so healthy and deliciously warming in winter.

Baked vegetables are delicious when served with whole steamed or baked fish. Bake the vegetables with a mixture of lemon juice and olive oil to enhance the citrus flavour.

Serves 4-6

1 whole fish, gutted and cleaned, e.g. 500g blue cod
2 lemons, sliced
2 tsp chopped ginger

Marinade:
1 clove garlic, peeled and chopped
1 tsp finely chopped ginger
1 lemon, juice and zest
pinch salt
black pepper, to taste
30 ml olive oil

1 spring onion, julienned, to garnish
1 lemon, zest of, to garnish

Fill the cavity of the fish with lemon slices and ginger and place on a heat-proof plate.
Make the marinade by mashing garlic, ginger, lemon juice and zest, salt, pepper and olive oil together.
Use a pastry brush to brush the marinade on the outside and inside of the fish.
Place plate over boiling water and cover. Steam for 8-10 minutes.
Place on a serving dish, top with spring onions and lemon zest, and serve with baked vegetables.

Note: A larger amount of fish, e.g. 1kg snapper, will take 10-15 minutes to steam.
