5 Veg Salad

These five colourful vegetables with a tasty dressing is sure to impress.

Serves 4

¼ red onion, finely sliced
½ yellow capsicum, deseeded and sliced
½ green capsicum, deseeded and sliced
½ Chinese cabbage, finely sliced
1 spring onion, julienned (finely sliced)
2 tsp finely chopped ginger
3 Tbsp Thai vinaigrette

Mix all vegetables together in a bowl.
Mix ginger and vinaigrette together and stir through vegetables.
Serve.
